I love a good smoothie, but perhaps you can tell by the title of this recipe that I have a strong dislike for drinking my greens. What can I say, I’m a girl who prefers a nice big salad over some kale that has been beat to a pulp. 😉
BUT. I’ve finally found a way to hide that nasty green taste that turns me off from the green smoothie trend. AND. My toddler freakin’ loves these things. Feel inspired to add whatever else you like, as I have a feeling you could hide a lot of other leafy green things in here.
Makes 6 servings
1 1/2-2 frozen bananas
1 cup frozen mango chunks
1 cup fresh or frozen pineapple chunks (if frozen, you’ll need to add more water)
2 cups fresh or loosely frozen baby spinach leaves (or kale)
1 cup fortified orange juice
4 Tbsp ground flaxseed or chia seeds
Optional: In the spirit of hiding things, I also mix a children’s probiotic powder and algae-derived omega 3 in here sometimes for my toddler. I think this would also be good with some fresh ginger root added.
Blend and serve. These are great alongside pretty much anything- roasted veggies, bean burgers, pasta dishes or even pizza. If your kids are like mine, they will be fascinated with the spring green color, too!
