This sandwich is meant to be a bit sloppy and full of layers, a perfect vegan alternative to a greasy BLT minus the fake bacon. The avocado and hummus bring a nice cooling effect to the warmed tofu and bread. A super easy lunch!
2 slices whole wheat bread
1 thick slice of extra firm tofu
1 Tbsp nutritional yeast
1 slice non-dairy cheese (I like Follow Your Heart)
2 Tbsp hummus
2 slices tomato
Handful of baby spinach leaves
Optional: Sliced sauteed mushrooms
Heat a small skillet with a bit of canola oil.
Add the slice of tofu and sprinkle with nutritional yeast.
While the tofu cooks, toast the bread.
After the tofu starts to get lightly golden, flip and cook the other side the same.
When the toast is done, spread one piece with hummus and the other with mashed avocado.
Layer with cheese, spinach, tomato, mushrooms if using, stack the tofu and close the sandwich. Cut in half and serve with chips, fruit or salad.
