This is a ridiculously easy meal that is also super filling. It’s a go to in our house on nights when we only have 5-10 minutes (or only feel like spending that much time), and it’s an easy finger food for vegbaby. Feel free to spice it up by using a hotter salsa.
6 x 6 inch tortillas
1 can vegetarian refried beans
1 cup non-dairy cheese shreds (Daiya or Follow Your Heart work well)
1 package premade seitan, cut into small strips (or homemade if that’s your thing!)
1 jar mild or medium salsa
Fill each tortilla with refried beans, cheese, and seitan and roll up.
Place in a round baking pan and top with salsa.
Bake at 375 for 25-30 minutes until the tortillas start to crisp.
Serve with sliced avocado.
