Recipe: Foil-Grilled “Campfire” Dinner

I had forgotten about this simple all-in-one dinner in foil we used to make when we ate meat. My family was never huge into camping growing up, but meals like this still made you feel like you could be out in the wilderness! If you‚Äôre looking to save time, use up extra vegetables, and fire up the grill, give this versatile recipe a shot — it also makes great finger foods for toddlers. I’ll remember this recipe next time we have an outdoor picnic dinner in the backyard. Foil makes easy clean up, too. ūüėČ


Makes 4 servings


4 pieces of aluminum foil, sprayed with cooking spray

4 corn on the cob, shucked and cut in half

8 red potatoes, parboiled (so they cook faster in the grill) and quartered

12 carrots, parboiled and cut into 2-inch pieces

1 white or yellow onion, peeled and quartered

4 vegan sausages, cut in half

Optional: broccoli, zucchini, yellow squash, sweet potatoes, garlic cloves, bell pepper

1 vegan bouillon cube

1/4-1/3 cup water


Preheat grill. Divide vegetables and vegan sausages into the 4 foils. Place bouillon cube and water into a small dish and microwave on high for 30-60 seconds until it melts and can be mixed into a liquid. Brush some of the liquid onto each veggie mixture. Close up the foil around the veggies and place on the grill. Cook for 30 minutes or until everything is tender!


Alternatively, you could season this with poultry seasoning, or onion + garlic powder, salt + pepper.


Serve with a green smoothie!
